Apple Date and Pecan Slice
Recipe adapted from Annabel Karmel's 'Small Helpings'
80g Butter
80g Brown Sugar
2 Eggs
200g Wholemeal Self-raising Flour
2 Large Green Apples
200g Dried or Fresh Dates, pitted
100g Pecans or Walnuts
Preheat the oven to 180 C.
Line a 20cm x 15cm baking tray with baking paper.
Peel core and chop the apples.
Chop the dates and nuts.
Cream the sugar and butter together.
Add the eggs and flour and mix.
Fold through the fruit and nuts.
Spread mixture into the lined baking tray.
Bake for 30 minutes.
Serve warm, maybe with yoghurt or custard as a dessert, or leave to cool then cut into bars or squares.
